"I wasn’t convinced about water chemistry until Scott Rao said it has an outsize effect on flavour. The crazy experience I had was not when I started using this product: It’s the brews when I didn’t use it. Suddenly, they tasted totally flat and lifeless by comparison. I have soft tap water where I live, so I just mix Third Wave with the tap water and I don’t even need to buy distilled water. The results are kind of amazing. I recommend it."
