BALANCED & SWEET
The latest from Kaito's Yellow Collection, Valle Inca is a lovely example of the coffees produced by the Prudencio Vargas Saenz led cooperative in the Yanatile Valley. Smooth and lightly floral, you can expect honeyed sweetness balancing red apple acidity.
Developed just enough to accentuate its natural sweetness and complex flavours, this light-medium roast single origin Peruvian coffee is best enjoyed black, and lends itself beautifully to filter or immersion methods.
In order to provide you the freshest coffee possible, all orders received up to and including Sunday will be roasted Monday and shipped Wednesday.

FROM THE ROASTER
Nestled in the Yanatile Valley in southern Peru, Valle Inca is a cooperative of producers led by Prudencio Vargas Saenz. Prudencio is known for his honesty, reliability, dedication, and willingness to invest in the community and intelligent projects for it.
These values inspired by Prudencio and the other producers, along with the altitude of origin and variety of beans, give this coffee a particularly interesting flavour.
At their best, Valle Inca coffees have elegant notes of honeyed flowers, crisp red apples, and a pleasant tannic quality like Oolong tea. These coffees taste great, but it's in a cup brewed fresh from the roaster that they really shine.
Coffees in Kaito’s Yellow Collection take you to new places. Expect a vibrant and dynamic taste experience. Perfect for people looking for coffees with brighter acidity and varying mouthfeel, with flavour notes more in the fruit, dessert, flower and subtle herb categories.

Kaito is a boutique coffee roastery, founded by partners in life and business, Holly & Paul von Hoyningen Huene, in their hometown of Hudson, Québec.
Adopting their name from the ‘kite’ fold that sets the foundation from which their origami bird emblem—Wazo—emerges, Kaito encourages thoughtful exploration of the incredible spectrum of possibilities that coffee presents.
With mindfulness and transparency as guiding values, Kaito continually strives to make the most delicious and sustainable coffee, and to share what they love with others who care as deeply as they do.
In the meantime, they’re simply doing their part to reveal something beautiful—one fold, and one coffee at a time.
