FROM THE ROASTER

The Gikingo Hill region of Burundi is known for its microclimate and high elevations, which provide the perfect conditions for growing coffee. The Red Bourbon varietal in particular thrives in this environment and is known for its clean, sweet and floral notes. The coffee is grown and is carefully hand-picked at the peak of ripeness.

The coffee beans are then brought to the Kaka Washing Station where they undergo a rigorous washing and fermentation process. The cherries are washed to remove impurities then depulped and left to ferment in water from a nearby stream for 10 to 12 hours. This fermentation process brings out the unique flavors and complexity of the beans, making them truly one-of-a-kind.

After fermentation, the beans are washed and graded in canals before being moved to covered tables to dry for a period of 14 to 21 days. This slow drying process ensures that the beans retain their flavor and aroma, making them some of the most sought-after in the world.
