BUTTERY & BRIGHT
From Kaito's Yellow Collection, San Jacinto delivers sunny hints of mango and pineapple with buttery smooth sweetness for a dynamic and balanced cup.
Developed just enough to accentuate its natural sweetness and complex flavours, this light-medium roast single origin coffee is best enjoyed black, and lends itself beautifully to filter or immersion methods.
In order to provide you the freshest coffee possible, all orders received up to and including Sunday will be roasted Monday and shipped Wednesday.

FROM THE ROASTER
San Jacinto comes from the collective production of three small producers located in San Pedro Necta, Huehuetenango.
The Bella Vista mill first sourced these coffees with the help of Byron Benavente (a long-time Bella Vista colleague), who helps them outsource coffee from this area of Huehuetenango. Through Byron, the trio of families have also received assistance in improving their agricultural management and processing at their wet mill using Bella Vista-inspired methods.
The three varieties composing this coffee are 70% Bourbon and 30% Caturra and Pache. There are two rounds of picking and coffee is handpicked and sorted by the members of the family, who also oversee their own wet mill processing and drying on their own patios.
This lot was sourced via our new partnership with Collaborative Coffee Source who work exclusively with the Bella Vista mill in Guatemala.
Coffees in Kaito’s Yellow Collection take you to new places. Expect a vibrant and dynamic taste experience. Perfect for people looking for coffees with brighter acidity and varying mouthfeel, with flavour notes more in the fruit, dessert, flower and subtle herb categories.

Kaito is a boutique coffee roastery, founded by partners in life and business, Holly & Paul von Hoyningen Huene, in their hometown of Hudson, Québec.
Adopting their name from the ‘kite’ fold that sets the foundation from which their origami bird emblem—Wazo—emerges, Kaito encourages thoughtful exploration of the incredible spectrum of possibilities that coffee presents.
With mindfulness and transparency as guiding values, Kaito continually strives to make the most delicious and sustainable coffee, and to share what they love with others who care as deeply as they do.
In the meantime, they’re simply doing their part to reveal something beautiful—one fold, and one coffee at a time.
