SWEET & REFINED
The latest from Kaito's Yellow Collection, La Estrella is a shining example of the complexity produced by the unique microclimates found in Colombia's Acevedo region. Expect a sugary and satisfying cup with notes of red berries and a delicate bouquet.
Developed just enough to accentuate its natural sweetness and complex flavours, this light-medium roast single origin Colombian coffee is best enjoyed black, and lends itself beautifully to filter or immersion methods.
In order to provide you the freshest coffee possible, all orders received up to and including Sunday will be roasted Monday and shipped Wednesday.

FROM THE ROASTER
The region of Acevedo is known for its variety of super interesting coffees produced by its unique microclimates. The altitude and the cool nights make for sweeter, more complex cups.
La Estrella is a collaborative microlot produced by neighbouring growers—Jhan Jarly Calderon of La Esmerelda and Ruben Polania of La Fortuna—in the Acevedo region, and placed in the top 20 of the esteemed Acevedo Cup competition. The feedback provided by international judges is invaluable to producers, and placing in this competition is a great honour for any grower. Producers whose coffees place well in the competition also receive a premium on the price of their coffee, and we're proud to share this coffee with you.
Coffees in Kaito’s Yellow Collection take you to new places. Expect a vibrant and dynamic taste experience. Perfect for people looking for coffees with brighter acidity and varying mouthfeel, with flavour notes more in the fruit, dessert, flower and subtle herb categories.

Kaito is a boutique coffee roastery, founded by partners in life and business, Holly & Paul von Hoyningen Huene, in their hometown of Hudson, Québec.
Adopting their name from the ‘kite’ fold that sets the foundation from which their origami bird emblem—Wazo—emerges, Kaito encourages thoughtful exploration of the incredible spectrum of possibilities that coffee presents.
With mindfulness and transparency as guiding values, Kaito continually strives to make the most delicious and sustainable coffee, and to share what they love with others who care as deeply as they do.
In the meantime, they’re simply doing their part to reveal something beautiful—one fold, and one coffee at a time.
